What is BLACK MAGIC?


A Japanese coffee liqueur that's delicious on the rocks and sugar-free! The ultimate coffee liqueur, "BLACK MAGIC," made by blending Junmai Ginjo sake and specialty coffee, and finishing it sugar-free. The harmony of fruity Junmai Ginjo sake with the rich flavor of Ethiopian coffee with fruity notes... Its flavor combines the "cherry blossom" and "apple" notes of Junmai Ginjo sake with the "bitter chocolate" and "mango" flavors of coffee.


Until now, most coffee liqueurs were sweetened and not meant to be drunk straight. We heard many comments like, "It's too sweet," "Can't the sweetness be reduced a bit?" and "Can't you make something more bitter?"

Therefore, we pursued a "coffee liqueur that is delicious straight and on the rocks," going through repeated trials and errors, which led to a surprising discovery. We concluded that "sweetening" has the effect of dulling the taste and, for better or worse, can mask the true flavor.

To put it bluntly, "even if you use poor quality sake and coffee, adding sugar can mask the taste." In other words, the opposite is true: "if you don't add sugar and make it sugar-free, there's no hiding anything." So, wouldn't it be possible to create an incredibly delicious coffee liqueur by making it sugar-free and using high-quality sake and coffee?

As a result, the idea of sugar-free was born. By eliminating all sugars, the inherent sweetness and umami of "sake" and "coffee" emerged, leading to the creation of a sugar-free Japanese coffee liqueur that is delicious on the rocks.

To make a delicious coffee liqueur, you need delicious sake! High-quality Junmai Ginjo sake has fruity notes. We thought, "Could we achieve the flavor of Junmai Ginjo sake in a coffee liqueur?" If it's sugar-free, we can preserve this delicate quality without masking it!

And conversely, we thought, "Wouldn't it be possible to achieve a good blend if we selected delicate, high-quality coffee that wouldn't overpower the sake's flavor?" This led us to Yirgacheffe coffee from Ethiopia, West Africa, known for its fruity aroma and flavor. That's right, it was because it was sugar-free that we were able to achieve harmony between sake and coffee.

"Ethiopian Yirgacheffe" is located at an altitude of 2500m and is known as one of Ethiopia's leading regions for high-quality coffee. The large temperature difference at high altitudes produces high-quality acidity in the coffee beans. Its aroma and flavor are so exquisite that they are compared to full-bodied red wine and the fruit itself.

One of the specialized techniques at the coffee roaster "0566 Coffee Works" is coffee bean "blending," and by applying this technique, the combination of this Junmai Ginjo and the harmonious Ethiopian coffee was born. BLACK MAGIC is a coffee liqueur that captivates both "sake lovers" and "coffee lovers."

"BLACK MAGIC" uses a cold brew manufacturing method where coffee beans themselves are steeped in "sake." The sake used is Junmai Ginjo sake - a superb product with a rice polishing ratio of 55%, crafted with "uncompromising artisan spirit" by "Sonno Kuramoto," a brewery founded in 1903.

Sonnou Kuramoto is a sake brewery located in the Hazu area of Nishio City, Aichi Prefecture, overlooking Mikawa Bay, that has been dedicated to brewing sake and relentlessly pursuing authentic deliciousness.

Typically, liqueurs are produced by adding "fruit juice" to "sake" for fruit-based varieties. In other words, "liquid" fruit juice is mixed with "liquid" sake. This reduces the alcohol content due to the fruit juice, and while the sake's flavor decreases, the fruitiness emerges. This dilutes the sake, but it is a common method for liqueur production.

In contrast, "BLACK MAGIC" uses a cold brew manufacturing method where coffee beans themselves are steeped in "sake." This means it is produced using only sake and coffee beans, without using any "water" or other liquids for coffee extraction.

This prevents other liquids from mixing with the sake, maintaining its concentration and almost no reduction in alcohol content. Thus, the sake is not diluted, and its flavor is preserved as is. Moreover, since coffee beans are directly infused into the sake for extraction, the coffee flavor comes through directly.

Indeed, "sake" and "coffee" achieve a WIN-WIN relationship, bringing out the flavors and umami of both. However, this manufacturing method has a drawback: the coffee beans absorb the sake, and the volume decreases by nearly half during the filtration process, significantly increasing costs. Both the "sake" and "coffee" used are of high quality, which drives up costs. Moreover, the cold brew method reduces the volume by almost half... Yet, in pursuit of "deliciousness," we arrived at this manufacturing method. Normally, mixing "coffee liquid" with "sake" would increase volume and save costs. However, with the belief that "we don't want to dilute it with water!" and "it's better to be delicious, even if it's more expensive," we decided to release BLACK MAGIC to the world, making it a somewhat premium liqueur, but thoroughly committed to deliciousness.

Special Luwak-style roasting "Single Blend"
Single blend is a roasting and blending method we arrived at in pursuit of Kopi Luwak. Coffee beans are roasted to the point where their potential is maximized, then stopped at that optimal roasting point. Therefore, for Kopi Luwak, "where to stop the roasting" is extremely important. As roasters, we searched for this best point, but we noticed something. We realized that the "roast level for good aroma" and the "roast level for good taste" were subtly different. This was a dilemma.

・Do we choose one or the other?・Do we stop roasting somewhere in the middle?
After much consideration, we decided to perform two roasts and then mix and blend them. And what a surprise, it brought out the best of both worlds, creating a magnificent harmony and enriching the depth even further. While I haven't heard of such a roasting method in the coffee world, it's a simple approach, so if it works well, we just do it. "Applying two types of roast to one green bean and blending them." We named it "Single Blend." Although it doubles the effort, 0566 Coffee Works' Kopi Luwak is finished with this single blend. Special

This YouTube video is from 2017, when I traveled alone to Sumatra, Indonesia, to search for Kopi Luwak. I first encountered Kopi Luwak about 20 years ago when I visited this region. The impact was immense, and I decided to go there myself to explore "what Kopi Luwak truly is" and "where and how Kopi Luwak is collected." First, I visited Kopi Luwak dealers and tried to negotiate filming, but I was consistently refused. That's understandable. Kopi Luwak is like a treasure to them; they wouldn't easily reveal its location to anyone. Even after finally getting permission to film, I was sometimes told "no" at the last minute.

I remember being at a loss in Medan, Sumatra, Indonesia, with my Indonesian partner HENGKY. Then, after exploring the jungle, we successfully collected Kopi Luwak! Its rarity deeply moved me, and I developed a desire to "spread the word about the phantom coffee, Kopi Luwak." The Kopi Luwak I sought was "wild and natural," known as "Wild Luwak." This means that the opposite, "non-wild," also exists. They keep civets in cages and feed them coffee cherries. This allows for efficient and easy collection of "Kopi Luwak." It means they don't have to scramble through the jungle like in this video. However, I insisted on wild ones. Besides the quality issue, I cannot condone keeping them in cages. However, as it is a business for those who handle them, I cannot stop it. But since we benefit from Kopi Luwak, we want to cherish the civets. All I can do is purchase "wild Kopi Luwak" and spread awareness of its wonder and quality. Our partners, the staff who collect wild Kopi Luwak, are protecting the jungle and the civets.

I value my relationships with such staff and conduct business with them. This is because it helps protect Kopi Luwak. Recently, there have been occasional callous comments on social media saying, "Stop selling Kopi Luwak." These are from people advocating for animal protection. While our Kopi Luwak only deals with wild ones, they hurled insults like "Don't abuse them by putting them in cages," not knowing the facts. Please don't misunderstand. We support the protection of the jungle and civets. However, it's also true that there are shops that deal with farmed Kopi Luwak, but I am not in a position to comment on that. I just want to continue dealing with wild Kopi Luwak, high-quality Kopi Luwak. I believe that this will lead to providing truly delicious Kopi Luwak and protecting the civets.
