We generously use Ethiopian Yirgacheffe as a 60% base. While Ethiopian coffee, when medium roasted, brings out the distinct crisp acidity characteristic of Ethiopia, we have blended it with "Hybrid Coffee Rum," which has a light honey-like sweetness that mellows and softens that acidity. This transforms the lingering acidity on the tongue into a gentle citrus fruit acidity. Not only that, but a sweet aroma unlike anything you've ever experienced in coffee spreads. That, of course, is the flavor of rum.
