Special Luwak-style Roasting: "Single Blend"
Single blend is a roasting and blending method that we arrived at in our pursuit of Kopi Luwak (civet coffee). Coffee beans are roasted to the point where their potential is maximized. In other words, for Kopi Luwak, determining "when to stop roasting" is crucial. As roasters, we sought this optimal point, and we realized something: there's a subtle difference between the "roast level for good aroma" and the "roast level for good taste." This presented a dilemma.

・Should we choose one over the other? ・Or stop roasting at an intermediate point?
After much deliberation, we decided to perform two separate roasts and then mix and blend them. And what a result! We were able to fully bring out the best of both, creating a magnificent harmony and adding even greater depth. While I haven't heard of such a roasting method in the coffee world, the approach is simple enough that once we knew it worked, we just ran with it. "Applying two types of roasting to a single green bean and blending them." We named it "Single Blend." Although it takes twice the effort, our Kopi Luwak at 0566 Coffee Works is finished with this Single Blend. Special Kopi Luwak deserves a special roast.

This YouTube video is from 2017, when I traveled alone to Sumatra, Indonesia, to search for Kopi Luwak (civet coffee). I first encountered Kopi Luwak about 20 years ago when I visited this region. The impact was tremendous, and I wanted to explore "What exactly is Kopi Luwak?" and "Where and how is Kopi Luwak collected?" So, I went to the local area. First, I visited dealers who handle Kopi Luwak and tried to negotiate filming, but I was rejected every time. Well, that's understandable. Kopi Luwak is like a treasure to them; they can't easily reveal its location to just anyone. There were also times when I finally got permission to film, only to be told "no" again just as I was heading out.

I remember being at a loss in Medan, a city in Sumatra, Indonesia, with my Indonesian partner HENGKY. Then, after exploring the jungle, we successfully collected Kopi Luwak (civet coffee)! I was deeply moved by its rarity and began to wish to "spread the word about the elusive Kopi Luwak to the world." The Kopi Luwak I sought was "wild and natural," known as "wild luwak." This means there is an opposite: "non-wild" luwak. This involves raising luwaks in cages and feeding them coffee berries. This method allows for efficient and easy collection of "Kopi Luwak." It means avoiding tirelessly searching the jungle as shown in this video. However, I insisted on wild luwak. Besides the quality issue, I cannot condone raising them in cages. However, as long as it's a business for those who handle them, I cannot stop it. However, since we benefit from Kopi Luwak, we want to cherish the luwaks. What I can do is purchase "wild Kopi Luwak," promote it, and let people know its wonders. Our partners, the staff who collect wild Kopi Luwak, are protecting the jungle and preserving the luwaks.

I value my relationships with these staff members and conduct business with them. This is because it helps protect Kopi Luwak (civet coffee). Recently, there have been a few insensitive comments on social media saying, "Stop selling Kopi Luwak." These are people advocating for animal protection. Although our Kopi Luwak is only wild, without knowing this, we received slanderous accusations like "Don't abuse animals by putting them in cages." Please don't misunderstand. We support protecting the jungle and preserving the luwaks. It is true that some stores sell farmed Kopi Luwak, but it is not my place to comment on that. However, I want to continue to handle wild, high-quality Kopi Luwak. I believe that this will lead to providing truly delicious Kopi Luwak and protecting the luwaks.
