What is the ultimate "DECAF" created by 0566 Coffee Works?
"If I drink coffee, I can't sleep at night."
"I'm pregnant, so I can't drink coffee with stimulating caffeine."
"I'm allergic to caffeine, and my face swells when I drink coffee."
There are various reasons, but many people love coffee but cannot drink it. So they turn to decaf, but the common belief is that "all decaf tastes bad."

"Decaf" refers to coffee with caffeine removed, also known as decaffeinated. Decaf is processed in various ways, but all methods extract not only caffeine but also the coffee's inherent aroma, bitterness, richness, and even its umami, halving its deliciousness. It would solve everything if there were delicious decaf, but such a convenient thing doesn't exist...
Then why not create it? With the know-how of 0566 Coffee Works' hybrid coffee technology, we should be able to revive the lost umami. So, we created delicious decaf! Moreover, it's the birth of a new world of decaf so wonderful in aroma, acidity, and richness that people ask, "Does this really not contain caffeine?"

Manufacturing Process
0566 Coffee Works' decaf uses Guatemalan water-processed green beans, where caffeine is dissolved and extracted with natural water. The water process safely removes over 97% of caffeine without chemicals. However, when caffeine is extracted, other umami components of the coffee are also removed. So, we introduced 0566 Coffee Works' hybrid coffee production technology, blending and steeping alcoholic beverages and fruit juices, followed by a drying process and special roasting. This allows the lost umami to be reborn and newly upgraded.

Why We Made Delicious Decaf
~DECAF DELICIOUS STORY~
"My daughter can't sleep if she drinks coffee or green tea because of the caffeine." It started with a casual conversation with a regular customer.
"But she loves coffee and drinks decaf from various places, but none of them are delicious."
Until now, 0566 Coffee Works had not handled decaf. Because it wasn't delicious. I couldn't bring myself to sell something I didn't think was delicious. However, I seem to have been mistaken. I thought people looking for decaf were those who wanted to avoid stimulants like caffeine, but there were surprisingly many people who wanted to drink coffee but couldn't because of the caffeine.
As a coffee shop, it's unbearable to think that people who love coffee can't drink it. Then it dawned on me, "Why don't I just create delicious decaf!" We are, after all, the coffee shop that developed hybrid coffee. With that know-how, we should definitely be able to make delicious decaf. People who love coffee but can't drink it, those who are sensitive to caffeine, or pregnant women. If they say they love coffee, I want to do something about it! That's when the "Delicious Decaf Production Project" began.
Using water-processed Guatemalan decaf
We immediately ordered many decaf green beans and started test roasting.
The points to check were:
"What are the negative and lacking flavors of decaf?"
"Which beans are most suitable for hybrid processing?" These two points.
After repeated roasting and data collection, we chose Guatemalan water-processed beans with a caffeine removal rate of over 97%. The reason for our choice was their adaptability to external liquid elements and their ability to bring out the inherent umami of the beans.

Our goal was "decaf you want to drink every day as your usual coffee"
We infused umami into the Guatemalan decaf green beans using hybrid coffee technology.
What we paid attention to was "not overdoing it." In other words, if we went too far with a special aroma and flavor, it would become self-satisfaction for the creator and distort the intended direction. We use alcohol, but we tried to keep the alcoholic taste as subtle as possible to bring out the original umami of the coffee.
Decaf is essentially coffee with caffeine artificially removed. So, the idea was to compensate for the removed umami using hybrid coffee techniques. As a partner for hybridizing, we aimed for a fruity and sweet decaf hybrid coffee by combining coffee with citrus fruits like mandarin oranges and lemons, which we had been researching for a long time. In fact, I had been exploring citrus-based hybrids for a very long time, so various plans were swirling in my head.
While much of this is proprietary, we maniacally repeated the process of steeping green beans in various alcoholic beverages and fruit juices, followed by roasting. No, this is the true essence of 0566 Coffee Works. Once we start, we can't stop!
The difficulty was that decaf green beans are unique. Infusing anything into them felt like pouring it into a black hole, and the aroma and flavor would become cloudy. We carefully adjusted the blend, making sure to bring out the richness without overdoing it, accumulating endless "additions," "subtractions," and "multiplications."
Ultimately, it was completed in just three months after more than 40 different roasts. The partners infused into the coffee beans were:
DECAF LIGHT - Fruit liqueur, Yuzu, Lemon
DECAF RICH - Blend of several distilled liquors
We offered the finished decaf to our regular customers and asked for their feedback. Here are some of their comments.

We received wonderful feedback from coffee lovers who could only drink decaf. This marks the completion of 0566 Coffee Works' "Delicious Decaf Production Project."
