≪Selecting Japanese Sake / Production Secrets≫

"HYBRID COFFEE-SAKE-WASHU" was the hybrid coffee that took the longest to complete. We spent a significant amount of time on the compatibility between the base coffee and the sake, and also on which aroma and taste to bring out. We felt the potential in the wide variety of Japanese sake, but at the same time, we faced difficulties in selection and repeatedly experienced setbacks. "When roasted, the alcohol components decompose at high temperatures and the aroma dissipates," "Due to low alcohol content, the alcohol sensation disappears," "No aroma comes out," "The taste is weak," etc. We failed many times and gave up many times. However, we couldn't give up on the idea of creating a coffee using Japanese sake, originating from Japan! While continuing to make prototypes, we arrived at the idea of "blending sake." We are accustomed to blending coffee beans on a daily basis, so we had no resistance to blending sake. On the contrary, we are professionals and experts in terms of what kind of aroma and taste will result from blending different types, and how to add, subtract, and multiply flavors. That's when we decided on the current types of sake and their proportions. While the types of sake are a trade secret, we carefully selected and blended unique sakes that would normally be unthinkable, then thoroughly soaked the green coffee beans, dried them, and finally roasted them to extract only the best parts of the sake, bringing the product to completion.

The completed aroma and flavor possess a fruitiness and aroma reminiscent of apricots, unlike Western liquors, along with a gentle yet strong sweetness and richness unique to Japanese sake.
