The legendary coffee "Kopi Luwak" (Civet Coffee) consists of undigested coffee beans that come from a civet, known as a "luwak." It is said that luwaks prefer ripe, delicious coffee cherries, and these fully ripened coffee beans develop their unique aroma through the action of enzymes in their bodies.

Why did I search for Kopi Luwak in Mandheling territory? The birthplace of Kopi Luwak is Aceh, at the northern tip of Sumatra. However, most of the coffee varieties in Aceh are "Ateng." While this is my personal opinion, I believe that the "Ateng" variety has a somewhat heavy flavor and cannot be considered a top-tier variety. That's why I focused on the Mandheling cultivation areas south of Aceh, around Lake Toba. The varieties cultivated in this area include the indigenous Linton, as well as LIN.S, Bourbon, Kartika, S795, and others. In any case, many excellent varieties are cultivated here.

Special Luwak Roasting: "Single Blend"
Single blend is a roasting and blending method we arrived at through our pursuit of Kopi Luwak (Civet Coffee).
Coffee beans are roasted to their maximum potential, and then the roasting is stopped at the ideal point. In other words, for Kopi Luwak, "where to stop the roasting" is extremely important. We roasters search for this best point, but we noticed something. We found that the "roast level for good aroma" and the "roast level for good taste" were slightly different. This was a problem.

・Should we choose one? ・Or stop roasting at an intermediate point?
After much deliberation, we decided to perform two roasts and then mix and blend them. And what do you know, they harmonized perfectly, bringing out the best of both, and furthermore, adding depth. I haven't heard of such a roasting method in the coffee world, but the method is simple, so if it's good, then we just do it. "Applying two types of roasts to one green bean and blending them." We call it the "Single Blend." It takes twice the effort, but 0566 Coffee Works finishes its Kopi Luwak with this single blend. Special coffee gets special roasting. The YouTube video embedded here was taken in 2017 when I traveled alone to Sumatra, Indonesia, to search for Kopi Luwak (Civet Coffee). I first encountered Kopi Luwak about 20 years ago when I visited this region. The impact was tremendous, and I wanted to explore "What exactly is Kopi Luwak?" and "Where and how is Kopi Luwak harvested?" So I went there. First, I visited Kopi Luwak dealers and negotiated for filming, but I was repeatedly turned down. Of course, they would. Kopi Luwak is like a treasure to them; they couldn't easily tell people where it was. There were times when I finally got filming permission, only to be told "no" at the last minute.

I remember being at a loss in the city of Medan on Sumatra, Indonesia, with my partner, an Indonesian man named HENGKY. Then, after exploring the jungle, we succeeded in collecting Kopi Luwak! I was deeply moved by its rarity and developed a desire to "spread the word about the legendary Kopi Luwak to the world." The Kopi Luwak I sought was "wild and natural," known as "wild luwak." This implies that the opposite, "non-wild," exists. Some people keep luwaks in cages and feed them coffee cherries. This makes it efficient and easy to collect "Kopi Luwak." You don't have to scramble through the jungle like in this video. However, I insisted on wild luwak. Aside from the quality issue, I cannot condone keeping them in cages. However, as long as it's their business, I cannot stop those who do so.However, since we benefit from Kopi Luwak, we want to treat the luwaks with care. What I can do is purchase "wild Kopi Luwak," promote it, and let people know its wonders. Our partners, the staff who collect wild Kopi Luwak, protect the jungle and conserve the luwaks.

I value my relationships with these staff members and conduct business with them. This is because it helps protect Kopi Luwak (civet coffee). Recently, I've seen some unkind comments on social media saying, "Stop selling Kopi Luwak." These are people advocating for animal protection. Although our Kopi Luwak is exclusively wild, they slandered us, saying, "Don't cage and abuse them," without knowing this. Please don't misunderstand. We support protecting the jungle and conserving luwaks. While it's true that some shops deal in farmed Kopi Luwak, it's not my place to comment on that. However, I want to deal in wild Kopi Luwak, in high-quality Kopi Luwak. I believe that this will lead to providing truly delicious Kopi Luwak (civet coffee) and protecting the luwaks.
