≪Manufacturing Process≫

0566 Coffee Factory has long been exploring hybrids of alcohol and coffee. Immersing green coffee beans in alcohol goes against the drying process in producing countries, so it was not easy, but it was completed thanks to the cooperation of the development department and related parties.

Green coffee beans are soaked in alcohol to ensure thorough penetration, then dried using a special method. After drying, the alcohol is evaporated by roasting at a high temperature of over 200 degrees Celsius. Although the alcohol volatilizes, its beverage components remain, creating a unique flavor and umami. The result is a mysterious coffee that has a distinct alcoholic feel despite being non-alcoholic. It is truly an original, found only at 0566 Coffee Factory! The birth of hybrid coffee.

Roaster's Comments

"The basic roasting for all hybrid coffees is stopped around high roast. This achieves an exquisite balance of aroma and umami. What's interesting about roasting is that the coffee generally lacks the negative acidity it originally possesses. When made into iced coffee, it becomes remarkably clear that there is no acidity, it's rich and mellow, and the aroma doesn't diminish even when cold. I've never encountered such coffee naturally. Nevertheless, roasting is difficult. After all, it's been soaked in liquid... That's why, if roasted properly, its performance is outstanding. Its overwhelming aroma is second to none among coffees. No, such a coffee shouldn't even exist! It's amazing that they developed such a thing; I pay my respects to the development department and am proud as a roaster to be able to create such coffee."
