Special Luwak Roasting: "Single Blend"

Single blend is a roasting and blending method that we arrived at in pursuit of Kopi Luwak (Civet Coffee). Coffee roasting is finished at the point where the bean's potential can be maximized. In other words, for Kopi Luwak, "where to stop roasting?" becomes extremely important. As roasters, we search for this best point, and we noticed something: there's a subtle difference between the "roast level for good aroma" and the "roast level for good taste." This was a discovery, but also a challenge.

・Should we choose only one? ・Should we stop roasting somewhere in between?

After much thought, we decided to apply two roasts and then mix and blend them. In other words, we roasted both to what we considered the "strike zone." And what happened? We were able to fully bring out the best of both, creating a magnificent harmony and even enriching the depth of flavor. While we haven't heard of such a roasting method in the coffee world, it's simple in execution, so if it's good, we just do it. "Applying two types of roasting to one green bean and blending them." We call it "Single Blend." It takes twice the effort, but 0566 Coffee Works' Kopi Luwak (Civet Coffee) is finished with this single blend. Special Kopi Luwak deserves a special roast.

To directly import Kopi Luwak, we traveled to Sumatra, Indonesia.
Lake Toba, the world's largest caldera lake, is located in an extremely remote area, a five-hour drive from Medan, a city on the island of Sumatra, Indonesia. We went directly to the jungle of this remote area, which is the habitat of luwak, in search of Kopi Luwak (Civet Coffee).

Why did we search for Kopi Luwak in the Mandheling region?
The birthplace of Kopi Luwak (Civet Coffee) is Aceh, at the northern tip of Sumatra. However, the coffee variety in the Aceh region is predominantly "Ateng." In my personal opinion, the flavor of "Ateng" is a bit heavy and cannot be considered a top-grade variety. That's why I turned my attention to the Mandheling cultivation area south of Aceh, around Lake Toba. The varieties cultivated in this area include not only the indigenous LINTON but also LINI.S, Bourbon, Kartika, and S795. In any case, many excellent varieties are cultivated there. We focused on those superior varieties.
Kopi Luwak (Civet Coffee) is collected in the jungles of the North Sumatra hinterlands. This means searching the jungle for civet droppings. Recently, there are cases where civets are kept in captivity and fed coffee beans, like farming. However, true Kopi Luwak is originally wild and natural, which is called WILD LUWAK.
We are committed exclusively to WILD LUWAK. After repeatedly traversing numerous slopes in the jungle for 30 minutes, we found it while being caught in a squall! This effort is the secret to its rarity. That's why Kopi Luwak is a phantom. Once found, we put the Kopi Luwak in a burlap bag and bring it back.
After just one day, the local staff who explored for Kopi Luwak (Civet Coffee) in the jungle felt like comrades. We shared meals, deepened our friendship, and promised to return.
Kopi Luwak from around Lake Toba, the world's largest caldera lake in North Sumatra, is no ordinary Kopi Luwak! It is a phantom coffee, a Mandheling version with a special aroma and deliciousness. This YouTube video is from when I traveled alone to Sumatra, Indonesia, in 2017 to search for Kopi Luwak. I first encountered Kopi Luwak when I visited this place about 20 years ago. The impact was tremendous, and I wanted to explore "What exactly is Kopi Luwak?" and "Where and how is Kopi Luwak obtained?" So I went there. First, I visited businesses that handled Kopi Luwak and tried to negotiate filming, but I was repeatedly rejected. Of course, that's understandable. Kopi Luwak is like a treasure to them, and they couldn't easily reveal its location to others. There were even times when I finally got permission to film, only to be told "No, never mind" as I was heading there.

I remember being at a loss with my Indonesian partner, Hengky, in Medan, Sumatra, Indonesia. "What should we do? I only have three more days in Indonesia." "Let's just keep looking." We researched online and made countless calls, finally finding a clue. And then, traversing the jungle, we successfully collected Kopi Luwak (Civet Coffee)! Its rarity deeply moved me, and I came to wish to "spread the phantom coffee, Kopi Luwak, to the world." The Kopi Luwak I sought is "wild and natural," known as "Wild Luwak." This means that the opposite, "not wild," also exists. They keep luwaks in cages and feed them coffee cherries. This allows for efficient and easy collection of "Kopi Luwak." It means not having to scramble through the jungle like in this video. However, I insisted on wild ones. Aside from quality issues, I cannot condone keeping them in cages. However, since those who deal with them are running a business, I cannot stop them.However, since we benefit from Kopi Luwak, we want to cherish the luwaks.What I can do is purchase "wild Kopi Luwak" and promote it to spread its wonderfulness. Our partners, the staff who collect wild Kopi Luwak, protect the jungle and conserve the luwaks.

I value my relationship with such staff and do business with them. This is because it helps protect Kopi Luwak (Civet Coffee). Recently, I've seen some unkind comments on social media saying "Stop selling Kopi Luwak." These are people advocating for animal protection. Although our Kopi Luwak is only wild, they, unknowingly, hurled slander, saying "Don't abuse them by putting them in cages." Please do not misunderstand. We are supporting the protection of the jungle and luwaks. It is true that there are shops that deal with farmed Kopi Luwak, but I am not in a position to comment on that. I simply want to continue dealing with wild, high-quality Kopi Luwak. I believe that this will lead to providing truly delicious Kopi Luwak and protecting the luwaks.
