≪Manufacturing Process≫
0566 Coffee Factory has long been exploring hybrids of alcohol and coffee. Immersing green coffee beans in alcohol is the exact opposite of the drying process in producing countries, so it wasn't easy, but it was completed thanks to the cooperation of the development department and various related parties.
The coffee is immersed in alcohol at the green bean stage, thoroughly permeated, and then dried using a special method. After drying, the alcohol is removed by roasting at a high temperature of over 200 degrees Celsius. Although the alcohol volatilizes, the beverage components remain, creating a unique flavor and umami. It resulted in a mysterious coffee with a strong alcoholic sensation despite being non-alcoholic. It's a true original found only at 0566 Coffee Factory! The birth of hybrid coffee. It's likely, though not confirmed, that this hybrid coffee is the first in the world. The lack of certainty is due to the inability to investigate the other side of the globe, but I have never encountered such coffee.
Roaster's Comments
"The basic roasting for all hybrid coffees stops around the high roast, where the aroma and umami are brought to an exquisite balance. What's interesting about roasting is that the negative acidity typically found in coffee is generally absent. When made into iced coffee, it becomes clearly apparent: there's no acidity, it's rich and mellow, and the aroma doesn't diminish even when cold. I've never encountered such coffee in its native form. That being said, roasting is difficult. After all, it's been soaked in liquid... But precisely because of that, when roasted properly, its performance is outstanding. Its overwhelming aroma surpasses any other coffee. No, such coffee shouldn't even exist! But it's truly impressive that they developed something like this; I pay my respects to the development department, and as a roaster, I'm proud to be able to create such coffee."
